Chef Sheldon has built a devoted following through his vibrant Hawaiian cuisine, including one of the islands' most beloved dishes: poke. The word poke translates to "slice" or "cut into pieces"—a simple act that sits at the heart of every great meal. It's where ingredients, technique, and the right tools come together, making Chef Sheldon the perfect guest for an evening at New West KnifeWorks.
Born in Hawaii, Chef Sheldon acquired his love for cooking from his parents.
Chef Sheldon competed in the 10th season of Bravo Network’s Top Chef: Seattle, where he won Fan Favorite. He received that honor again when he returned to the show in 2017 for season 14: Charleston.
In 2016, he and his wife opened their first restaurant, Tin Roof, and in July 2022, the couple purchased Tiffany's Restaurant & Bar, featuring true Hawaii classics.
His cookbook, Ohana Style: Food from Hawai'i, for your family, has creative plant-based spins and shortcut cooking techniques to show how quick, easy, and flexible Hawai'an cuisine can be, all while centering the cusine's legacy of communal-style eating.
